Vegetable Korma - Quick Recipe

Ingredients: 

 

  • Mixed Veggies Cut - Carrot, Califlower, Cabbage, Peas, Capsicum and any other vegetable of your choice

  • 1 cup fried onions

  • 1 1/2 cups yogurt

  • 1 tbsp ginger/garlic paste

  • Half tsp turmeric powder

  • 2 tsp red chilli powder (if you want it mild or less spicy 1tsp is fine)

  • Half a tsp of garam masala powder

  • 2 small sized cinnamon sticks

  • 3-4 cardamoms

  • 2 cloves

  • 3 bay leaves

  • 2 tbsp lemon juice

  • 2 tsp Corinder powder

  • 2 tsp Cumin powder

  • 3 green chillies chopped

  • A few coriander leaves finely chopped

  • A few mint leaves finely chopped

  • Salt to taste

 

 

Preparation Method:

 

Take a deep bottomed vessel heat half a cup of oil on medium heat and add cinnamon, cardamoms, cloves and bay leaves, Add onions and fry till golden brown

Now add ginder garlic paste and fry little until it becomes dry. To this add cut vegetable, corinder and cumin powder, salt, red chilli powder, tumeric powder and and fry well for until for 10 mins, and then add water sufficient for veggies to cook well.Sprinkle Garam Masala Powder. Cover with lid and let it simmer , stir occasionally.

 

Now cook until the oil starts to separate, the vegetables are cooked well and you achieve a gravy like consistency. Garnish with Corinder Leaves and server ..makes an awesome combination with Naans
