
Mixed Fried Rice

Ingredients:

2 cups of basmati rice

1 tbsp vegetable oil
-
1 tbsp sesame oil (optional, if added gives good flavor)

2 garlic cloves, finely chopped
-
1/2 kg chicken breast boneless cut into small pieces
-
20 pieces of shrimps (boiled)

2-3 eggs
-
1 large carrot, cut into fine cubes
-
1 cup Cabbage, thinly sliced
-
1 Green BellPepper, deseeded and thinly sliced
-
2 spring onions, finely chopped
-
2 tbsp soy sauce
-
1 tsp white wine vinegar
-
1 tbsp Green Chilli Sauce
-
Salt to tast
-
1 tsp Pepper
-
1/2 tsp Chinese Salt
-
Milk - 2-3 tspoon
Preparation Method:
Cook Rice and Drain out the water Thorougly. Keep rice aside to cool down
Meanwhile, heat the oil in a large frying pan, stir fry chicken for 10 min until the color of the chicken changes to white, keep this aside.
Now in the similar way stir fry shrimps and keep a side.
Beat eggs by adding little milk, just 2-3 tspoon, and salt to taste.Then fry egss in oil in the similar manner of scrambled eggs,
Stir-fry carrot, bell pepper remaining vegetables over a high heat for 2-3 mins. Add 1/2 of the soy sauce, chilli sause, salt, pepper, chinese salt and continue cooking for a while, to this mixture add fried chicken, shrimps and scrambled eggs and mix them thorougly. Add garlic and spring onions at the end and fry for just 1-2 mins more.
Add rice to the pan with the onions and veggies, then stir-fry for 2 mins

Mix together the soy sauce and vinegar, sesame oil, add little more pepper and chinese salt, stir fry for another 2-3 mins. Transfer to plates/bowls and serve immediately.
