
Vegetable Fried Noodles

Ingredients:

150g pack medium noodles

1 tbsp vegetable oil

1 tbsp sesame oil (optional, if added gives good flavor)

2 garlic cloves, finely chopped

1 large carrot, cut into matchsticks

1 cup Cabbage, thinly sliced
-
1 Green BellPepper, deseeded and thinly sliced

2 spring onions, finely chopped
-
2 tbsp soy sauce
-
1 tsp white wine vinegar
-
1 tbsp Green Chilli Sauce

Salt to tast
-
1 tsp Pepper
-
1/2 tsp Chinese Salt
Preparation Method:
Cook the noodles according to pack instructions by adding sufficient amount of salt.
Meanwhile, heat the oil in a large frying pan, then stir-fry carrot, bell pepper remaining vegetables over a high heat for 2-3 mins. Add 1/2 of the soy sauce, chilli sause, salt, pepper, chinese salt and continue cooking for a while, Add garlic and spring onions at the end and fry for just 1-2 mins more.
Drain the noodles thoroughly, if possible run cold water in the noodles this makes them non-sticky, add noodles to the pan with the onions and veggies, then stir-fry for 2 mins

Mix together the soy sauce and vinegar, sesame oil, add little more pepper and chinese salt stir fry for another 2-3 mins. Transfer to plates/bowls and serve immediately.
